Monica Huerta

She is a renowned chef from Arequipa who has taken the good dishes of her restaurant "La Nueva Palomino" to Italy thanks to the gastronomic and cultural program "Peru feeds your soul" held in Milan. Huerta applies and shares ancestral cooking techniques in the kitchen. She also highlights the value of typical products from Arequipa, as the Creole black corn which is almost not grown anymore and is used to prepare the traditional chicha guiñapo. This refreshing drink when turned into vinegar or "chichagre" is used as a seasoning on different dishes such as Arequipa s typical "sarzas".
