He is a chef, entrepreneur, and also represents the new generation of Peruvian chefs who promote Peruvian cuisine. He is the owner of famous Central restaurant and has been recognized by Marie Claire Magazine as "The new star of Lima s gastronomic scene" and as the "New King in the country of cebiche" by Chilean newspaper La Tercera. In June 2012, he started a new project with Orient-Express Hotels Ltd and opened Senzo Restaurant located at the Palacio Nazarenas Hotel in Cusco. In July of that same year he opened LIMA Restaurant in London. In 2013, he founded Mater Initiative to do research and investigations about millenary Peruvian products and their use in modern cuisine. In 2016, Central Restaurant in Lima appeared 4th on the list of the Fifty Best Restaurants in the World by Restaurant Magazine for the second consecutive time.
