He is a Nikkei cuisine promoter, a style of cooking which started by mixing Japanese soy sauce and Peruvian aji chilli pepper. In 2014 he opened "Maido" Restaurant, elected the seventh best restaurant in Latin America that year. Mitsuharu opened the doors of his restaurant which is based on a Japanese-Peruvian concept. The menu is completely his creation. Maido shone at the awards ceremony of British magazine "Restaurant". It was the restaurant which had escalated the most on the 2016 list of the 50 best restaurants in the world, coming in thirteenth place.
