Central Restaurant has been able to satisfy the critics’ high culinary standards. Also, their tasting menu offers a journey thought the vast national biodiversity, mentioning the altitude from where each product comes from and its history. Besides his work at Central, Virgilio Martinez has two other restaurants in London city and is about to open one more in Dubai. He is also the leader at Mater Iniciativa, a project that investigates and recovers Peruvian food products and introduces them into the Peruvian cuisine with the help of local producers.
