The success of Peruvian gastronomy in the world is the result of a combination of elements, starting with having different recipes from every region including diverse cooking techniques to finally obtain unique flavors. Also, Peruvian cuisine is a cultural heritage; the mixture of all civilizations which have lived in the country made possible the existence of such culinary variety.

In order to understand the true meaning of Peruvian gastronomy and to get to know it better we have to do research on it, dare to innovate, reappraise every detail, from the prehispanic cultures to the 19th and 20th centuries’ migrations. Virgilio Martinez, owner and chef at Central restaurant, the fourth best restaurant in the world, definitely fulfills these characteristics.

Located in Miraflores district, Central Restaurant has been awarded for the second time in a row the fourth best restaurant in the world by the prestigious Restaurant Magazine in its “World’s 50 Best Restaurants” list. This famous list is prepared by a group of gastronomic critics who travel the world visiting different places and then choose the best by vote.

Central Restaurant has been able to satisfy the critics’ high culinary standards. Also, their tasting menu offers a journey thought the vast national biodiversity, mentioning the altitude from where each product comes from and its history.

Besides his work at Central, Virgilio Martinez has two other restaurants in London city and is about to open one more in Dubai. He is also the leader at Mater Iniciativa, a project that investigates and recovers Peruvian food products and introduces them into the Peruvian cuisine with the help of local producers.
