Virgilio Martinez, owner and chef at Central restaurant, the fourth best restaurant in the world, definitely fulfills these characteristics.Located in Miraflores district, Central Restaurant has been awarded for the second time in a row the fourth best restaurant in the world by the prestigious Restaurant Magazine in its “World’s 50 Best Restaurants” list. This famous list is prepared by a group of gastronomic critics who travel the world visiting different places and then choose the best by vote. Central Restaurant has been able to satisfy the critics’ high culinary standards. Also, their tasting menu offers a journey thought the vast national biodiversity, mentioning the altitude from where each product comes from and its history. Besides his work at Central, Virgilio Martinez has two other restaurants in London city and is about to open one more in Dubai. He is also the leader at Mater Iniciativa, a project that investigates and recovers Peruvian food products and introduces them into the Peruvian cuisine with the help of local producers.
