Carapulcra
A tasty stew that comes from the colonial era and is one of the oldest mestizo dishes in Peru. Among its ingredients we find papa seca (dehydrated potatoes), ground peanuts, ají panca, pork and more. This stew is the faithful companion of the Sopa Seca, both make an already classic and inseparable combination of Creole food.
Chupe de Pallares Verdes – (Green Lima Beans Soup)

This dessert is originally from Cañete and Chincha. It is prepared with cooked and blended black beans adding chancaca, milk, sugar and cloves. In Chincha, the Chapanas are quite a popular dessert. Its origin dates back several centuries, to pre-Columbian times, since ingredients such as yucca, chancaca and corn husk are used in its preparation in which the sweet is wrapped, all ingredients from ancient Peru and which until now are the perfect mix to create this wonder of Peruvian gastronomy.
