Javier Wong

Javier Wong is a specialist in sole cebiche and considered by many as the best cebiche maker in the world. He is self-taught and temperamental; his cuisine is considered a cult. Javier is the best in sole and octopus preparations due to its creativity when chopping and mixing ingredients. He has become famous for cooking according to his imagination, intuiting the diner s taste. His restaurant, Sankuay, is as unique as him. It has no sign on it; he provides services behind closed doors and only by previous reservation. The place has 10 tables, it has no menu or waiters; Mr. Wong is the only one welcoming guests and talking to them. In 2011 he wrote the book "Javier Wong and the world s best cebiche", where he tells his story, talks about his recipes and life philosophy. He was recognized by British newspaper The Guardian as the World s Best Cebichero. In 2014 he was the winner of the 2nd edition of the "Chowzter World s Tasties Fast Feast" in London as his sole cebiche was considered the best dish of the World.
