A standout moment for Peru! At Madrid Fusión 2026, Peru stole the spotlight with an immersive experience featuring live cooking, mixology, coffee tastings, and talks celebrating the richness of its culinary heritage. Held from January 26 to 28, the congress brought together more than 200 chefs and industry professionals from around the world.
At the heart of the proposal was a Taberna Limeña—a space of over 100 m² where every dish became an invitation to explore the country. It was more than just tasting food; it was about discovering stories, flavors shaped by time and distance, inherited techniques, and a sense of pride present in every detail.
Over the three days, visitors were taken through a full-day culinary journey: coffee in the morning and Peruvian pisco-based cocktails in the afternoon, all woven together through three iconic routes—Lima, the Peruvian Amazon, and the Northern Coast. The approach was unmistakably contemporary: tradition evolving, a rich diversity of ingredients, and a strong commitment to sustainability at its core.
The program featured talks and tastings that resonated directly with audiences: bread as an expression of Lima’s identity, coffees that continue to surprise the world, and a forward-looking perspective on regenerative cuisine from the Amazon. In the kitchen, the menu stood out with creations such as red tuna tiradito with yellow chili pepper, cumbaza Cebiche, chilled aguaje soup, quail juane with plantain purée and cocona salad—alongside drinks like passion fruit pisco sour and Pisco punch, and desserts such as guargüero filled with lúcuma dulce de leche and masato ice cream.
This showcase also comes at a strategic time: Spain is the seventh-largest source market for inbound tourism to Peru. According to the 2024 Foreign Tourist Profile, Spanish visitors stay an average of 15 days and spend around USD 1,840, with a strong interest in cultural, gastronomic, and nature-based experiences. Destinations such as Cusco, Arequipa, Puno, and Ica remain among their top choices.
