Peruvian gastronomy played a major role in the 46th edition of the Food & Wine Classic, the most exclusive gastronomic festival in the United States, held in the city of Aspen, Colorado, between June 15 and 17.
The magazine Cosas published an interesting article about this festival in which it highlighted the major presence of Peruvian cuisine in the busy schedule of demonstrations, master classes, tastings and lectures given by well-known faces from TV cooking shows in the United States.
According to the article, Peruvian gastronomy not only shone in the Grand Tasting Pavilion, a space where more than 200 exhibitors offer product tastings, but also in one of the main events known as the Publisher's Party, held at the top of a mountain and called the Top of the Mountain Party: Fiesta de Peru.
Peruvian-Venezuelan chef José Luis Chávez, owner of Mission Ceviche, the 'fast casual' Peruvian cuisine concept in New York, was in charge of representing Peru with delicious dishes at the festival.
"In Aspen, the success of Peruvian cuisine was overwhelming, especially at the Grand Tasting Pavilion. José Luis Chávez soon convinced those present (...) with a menu that changed every day, but which included the unmissable ceviches, causa and a rice and duck dish that literally sold out on the final Sunday of the Food & Wine Classic", the magazine noted.
Several famous chefs invited to the event were able to taste Chávez's creations, one of them being Andrew Zimmern, host of the famous television program "Bizarre Foods".
Zimmern, who has already visited Peru, expressed his admiration for Peruvian gastronomy. "Peruvian cuisines, in the plural, have taken the world by storm. From the ingredients of native cuisines to Nikkei cuisine, chifa and post-colonial Spanish influence, Peru is a global culinary leader that is already influencing chefs from all the other continents", the prestigious chef told Cosas magazine.
The magazine also interviewed Ricardo Romero, director of the Los Angeles office of the Peruvian Commercial Office, who highlighted Peru's participation in the main party at the event.
"Spain has been participating in the Food & Wine Classic for twenty-seven years and has never been able to achieve a presence like Peru has in the most important event at the festival, the Publisher's Party, which traditionally takes place in the mountains and is attended by only 500 people, including famous chefs, businessmen, investors and very influential people in the world of cuisine. This goal was achieved thanks to the proactive support of PromPerú Country Image and the Ministry of Foreign Trade and Tourism", said Romero.
