When we talk about Quinoa, we instantly think of a source of nutrients. This Peruvian Superfood contains a lot of protein and fiber, which is necessary for children in the growth stage or students; and for athletes, too. As is known, quinoa has a record of five thousand years and dates back to the pre-Hispanic Tiahuanaco culture. The Incas and Aymaras consumed it when they made long journeys and believed that it had mythical origins. However, it began to be consumed in stew at the time when the Spaniards arrived. Garcilaso de la Vega mentions this dish in his chronicles: "They prepare it in stew, because of its good taste and because it is very healthy." How to prepare quinoa stew?

To prepare a delicious quinoa stew it is important to soak it a day before or at least two hours before cooking. Subsequently, it is important to wash it well until all the foam is expelled. Repeat the process until it is clean. 

 

In turn, it is necessary to chop onion and brown it in the pan along with yellow chili pepper and garlic to create a tasty dressing. Add quinoa and half a liter of water until it breaks the boil. In this part, you have to pay close attention because the water may dry up. In that case, it is necessary to add a pinch of oregano and mix progressively for a few minutes. 

 

Then, place peeled and chopped potatoes when the stew is boiling. In a matter of minutes, the potatoes will cook. The final touch comes with a splash of milk, pieces of cheese, salt and huacatay. Mix and that's it! Other versions of this stew include vegetables, chicken pieces and more ingredients that add a special touch to its pleasant flavor.
